During the summit, study results demonstrating the many health benefits of eating mushrooms were offered. Some of those benefits outlined showed that:
• Mushrooms contain a large variety of macro and micro nutrients that are not commonly found in produce such as vitamin D, potassium and micronutrients such as ergothionene and selenium. Having these nutrients present in a non-animal based food product means that vegans and vegetarians will benefit from their consumption in order to reduce the reliance on dietary supplements.
• Mushrooms are low in calories and, because of their unique composition, can easily be substituted for meat products. This means that low carb dieters can substitute one meat serving with a plant based foodstuff and significantly reduce the number of calories in their daily intake. Not only does this reduce the number of calories consumed overall, but reduces the amount of saturated fat that is consumed, helping to reduce inflammation and cholesterol. Dieters can not only lose weight faster, they can keep it off longer and improve blood chemistry by simply making one substitute daily.
• Mushrooms have the ability to provide an immune system boost which prevents the spread of communicable diseases such as colds and the flu as well as reducing the severity of the symptoms.
